Banana Nut Bread

Banana Nut Bread
¾ c butter
1 ¾ c sugar
3 whole eggs
1 egg yolk
5 lg ripe bananas, peeled and mashed
3 ½ c flour
1 t salt
1 T + 1 t baking powder
½ c walnuts, chopped

Preheat oven to 350. Butter two loaf pans or 18 muffin cups. Cream butter and sugar together in a large bowl. Beat in the eggs, one at a time, creaming well after each addition. Mix mashed bananas into the egg mixture. At this point, the batter will appear to “break” and become soupy. Sift all dry ingredients together and add them to the egg mixture. Mix gently. Add walnuts. Pour in pans and bake at 350 for 50-60 mins.

Banana Nut Bread (another from mom)
½ c shortening
1 c sugar
2 eggs
4 lg bananas
4 T sour milk
2 t soda
2 c flour
½ t salt
1 t vanilla
1 c walnuts, chopped

Cream shortening and sugar. Add beaten eggs. Mash bananas, mix with milk, add soda. Combine these mixtures then add other ingredients. Bake at 350 for 1 hr. (To double batch, use ¼ c shortening and ¼ c applesauce. Can use frozen bananas and cake flour (2 T corn starch per cup of flour)).
