Campbell’s Cheesy Chicken and Rice Bake
1 can cream of chicken soup (or other)
1 1/3 c water
¾ c uncooked, regular white rice
½ t onion powder (or ½ pkg onion soup mix)
¼ t black pepper
1 ½ lbs skinless, boneless chicken breast halves (4-6)
1 c shredded cheddar cheese (4oz) (opt if using onion soup mix)
Mix soup, water, rice, onion powder and pepper in 2 qt. shallow baking dish. Top with chicken. Sprinkle chicken with additional pepper. Cover and bake at 375 for 45 mins, or until chicken is no longer pink and rice is done. Uncover. Sprinkle cheese over chicken. TIP: Can stir 2 cups fresh, frozen or canned veggies into soup mixture before topping with chicken. Prep time: 5 min, Bake time: 45min, Serves: 4-6
