Classic Homemade Noodles (for Ckn Noodle Soup) Gma Robinson
One chicken, turkey frame, or chicken pieces
1-2 bay leaves
Noodles:
1-2 eggs
Enough flour to make a stiff dough (doesn’t stick to hands)
Dash of salt
¼ t baking powder (or more) to make noodles puffy
Boil chicken and bay leaves in water. After it boils, turn down heat to simmer for an hour. While simmering, make noodles: Roll out dough on clean counter. Let dry a bit. Cut in half, then cut thin strips for noodles. Let dry again if possible. Don’t leave dough out for longer than one hour.
Remove chicken pieces from broth and skim off any surface. Trim fat and bones from chicken. Turn up heat so broth will boil, then add noodles. After it boils again, turn down heat to simmer until noodles are tender. Can add diced onions, celery, carrots, and potatoes at this point for Chicken-Vegetable Stew. Simmer for about 10-20 minutes. Add salt and pepper to taste. Time: ~2 hours
