Wanna-be Landmark Restaurant’s Twice-Baked Potatoes
6 lg baking potatoes
2 T butter
3 oz cream cheese
¼ c milk (opt) (or more till creamy, not dry and stiff)
1 c grated cheese
6 slices cooked bacon, crumbled
Sour cream (opt)
Sliced green onions (for garnish)
Cook potatoes in microwave or oven. Scoop out semi-soft potatoes, but leave quite a ring of potatoes inside the skins to make firm, little “dishes”. Mix scooped-out potatoes and remaining ingredients in a large bowl. Put big scoops of potato mixture back in skins. Top with grated cheese, S&P, and sliced green onions. Bake to reheat or broil for a crisp look.
