Chili Relleno Casserole Gooseberry Patch
2 4oz cans whole green chili peppers, seeded (I needed 4 cans to cover a 13x9 pan)
1 c Monterey Jack cheese, grated
1 c Cheddar Cheese, grated
1 doz eggs, beaten
1 c milk
salt & pepper to taste
Heat oven to 350. Coat a 13x9" pan with non-stick cooking spray. Cover bottom of pan with a layer of open chili peppers. Cover peppers with MJ cheese. Place another layer of peppers, then cover with cheddar cheese. Mix eggs, milk, S&P. Pour egg mixture over layer of peppers and cheese. Place in oven for 45 mins. Take out when golden brown on top and a knife comes out clean when sliced in the middle. Let sit for 5 mins before cutting. Serve with salsa and corn chips.
