Zucchini Crescent Pie

We love this as a main or side dish.

Zucchini Crescent Pie  Gooseberry Patch

4 c zucchini, thinly sliced
1 c onion, chopped
1/2 c butter
1/2 c parsley, chopped
1/2 t salt
1/2 t pepper
1/4 t oregano
2 eggs, beaten
8oz mozzarella cheese, shredded
8oz tube crescent rolls

Preheat oven to 375. In skillet saute zucchini, onion, and butter for 10 mins. Stir in seasonings. Blend eggs and cheese and stir into veggie mixture. Separate dough and place in an ungreased quiche/pie pan; press together to form crust. Pour veggie mixture on top of crust. Bake for 18-20 mins. Let stand 10 mins before cutting.
