Cheesy Baked Ziti

My husband loves baked pasta, and the kids do too for that matter. This one turned out delicious, considering I changed quite a few things from the original, so I decided to write it down so I can make it again!

3-4 cups mozzarella cheese, divided
2 eggs, beaten
1/4 c Parmesan cheese
fresh basil
cooked italian sausage (opt)
1 box penne pasta (or ziti), cooked and drained
1 jar spaghetti sauce
tomatoes, diced

Preheat oven to 350. Combine ~2 cups mozzarella cheese (or cottage or ricotta), eggs, Parmesan cheese, and basil in a bowl; set aside. Combine pasta with sauce, sausage, and tomatoes in another bowl (or in the pot from the stove).  Spoon half the pasta mixture in 13x9 baking dish; evenly top with cheese mixture, then remaining pasta mixture. Sprinkle with mozzarella cheese, a little Parmesan cheese, and then Italian seasoning. Bake 25-30 mins or until heated through. Prep time: 20 mins, Cook time: 30 mins, Servings: 8
