Beef and Cornbread in a Bundt Pan

This is a great meal that looks fancy but isn't too much work. We love it! Thanks Patsy.

Beef and Cornbread in a Bundt Pan  Patsy Franko
2 boxes jiffy corn bread mix (or see substitute below, doubled for 2 boxes)
3 eggs
1 can cream corn
1 cup shredded cheddar
1 pound hamburger
1 diced onion
1 diced bell pepper
1 T fresh garlic (or 1 tsp dry)
2 T chili powder (you could also use taco seasoning)

Mix first 4 ingredients together until just mixed. Pour half the batter into a well greased bundt pan. Meanwhile cook the remaining ingredients together, drain grease. Layer the meat onto the cornbread mixture in bundt pan. Top with other half of cornbread mixture. Bake at 350 for 30-35 mins or until cornbread is done. Let cool 5-10 mins. Invert onto plate.

Jiffy Corn Muffin Mix Copycat (from Food.com)
*Equal to 8.5oz box, 1 1/2 c mix

2/3 c flour
1/2 c yellow cornmeal
1/3 c sugar
1 T baking powder
1/2 t salt
2 T vegetable oil

(If making muffins, add 1 egg and 1/3 c milk)
