Zucchini Muffins
4 eggs
2 1/8 c sugar
1 2/3 c canola oil
1 ¼ t vanilla
4 ¼ c shredded zucchini
2 2/3 c flour (or 2 ½ plus 2 c cooked oatmeal)
1 t baking powder
1 ¼ t salt
2 ½ t baking soda
1 ½ t cinnamon
1 1/3 c chopped nuts
1 1/3 c raisins
Mix first four ingredients in Bosch with whips until mayo like texture. Change to dough hook and add remaining ingredients. Pour into sprayed or greased muffin tins ¾ full. Bake at 350 for 20 minutes or until done. Makes 4 dozen.
