I just discovered that I LOVE Waldorf Salad. Try it out if you dare. Great for apple season. YUM!
Waldorf Salad (from Better Homes & Gardens)
2 c chopped apple and/or pear
2 tsp lemon juice (I had to use lime and it was still yummy)
1/4 c chopped celery (1/2 stalk)
1/4 c chopped walnuts or pecans, toasted
1/4 c raisins, snipped pitted whole dates, dried tart cherries, or mixed dried fruit
1/4 c seedless green grapes, halved (red work fine)
1/3 c mayo or salad dressing
In a medium bowl toss apple with lemon juice. Stir in celery, nuts, raisins, and grapes. Stir in mayo until combined. Serve immediately or cover and chill for up to 8 hours.
Toasted Nuts (for added flavor boost I consider almost necessary)
Spread nuts in a single layer in a shallow baking pan. Bake in oven at 350F for 5 to 10 min or until the pieces are golden brown. Check them frequently to make sure they aren't getting too brown. If they start to burn, they go quickly and generally can't be salvaged. Stir once or twice.
