Carrot Cake

Fam recipe.

Carrot Cake
2 c sugar
3 eggs – add one at a time
1 c canola oil
2 c finely grated carrots
1 c (small can) crushed pineapple
1 box flaked coconut
2 t vanilla
3 c flour
2 t soda
2 t cinnamon
2 c chopped nuts
1 t salt

Cream Cheese Frosting:
1 (3 oz) pkg cream cheese, at room temp.
4 T butter, softened
1¾ c powdered sugar
¼ t vanilla extract

Mix together 1st 3 ingredients. Add next four ingredients. Sift in the rest. Put into large greased cake pan, 11x8x2 or larger. Bake 1 hour at 350 – don’t over bake. Frosting: In a small bowl, combine ingredients. Beat on low speed to mix, then at high speed to blend smoothly. Makes 1½ cups.
