Quick Black Bean Soup (from mom; Louisville, KY Courier-Journal)
2 cans black beans
1 c salsa
Pinch of dried red chili peppers
Opt. Garnishes:
Bacon
Tomatoes
Cilantro
Onion
Sour cream
Bell peppers
Combine 1 can beans and ½ cup salsa in a blender. Blend about 1 minute or until very smooth. Pour the blender contents into a pan on medium heat (or in crock pot). Repeat with remaining beans and salsa. Can add water if you want a thinner soup. Boil; stir often. Serve with optional garnishes, quesadillas, chips, or white rice. Serves 4.
Quesadillas:
4 flour tortillas
1 ¼ c grated cheese
Place 1 tortilla on medium hot greased skillet. Sprinkle with cheese and a few of optional garnishes, if desired. Place another tortilla on top. Cook until cheese begins to melt, turn over and cook through. Slice in triangles and serve with soup and salsa. Serves 4.
