Swedish Meatballs

Swedish Meatballs Gma Robinson
2 ½ lb ground meat
½ lb sausage (or more ground meat)
½ c ground onion (or chopped onion)
1 T salt
2 eggs
1 c rolled or quick oats
¼ t pepper
½ c milk
3 T butter (opt)

Combine all except butter. Mix lightly but thoroughly. Shape into 3-quarter-inch balls. Brown lightly in butter (opt). Put on cookie or baking sheet. Bake at 350 for 30 mins. Makes about 6-12 dozen.

Great served over rice or potatoes and in various other dishes.

Instant Pot Mashed Potatoes Nicole

Prep time 10 minutes, cook time 10 minutes, time to come to pressure 8 minutes, total time 20 minutes, servings 6


  • 3 Pounds Potatoes 6 medium, Peeled (opt) and Sliced
  • Water to Cover Potatoes About 4-5 cups
  • 2 t salt, divided
  • 1/4 Cup butter 
  • 1/4 C sour cream (or less)
  • 1/4 C mik
  • 1/2 t garlic powder
  • 1/2 t pepper 

  • Place the peeled and sliced potatoes into the bottom of the instant pot.
  • Cover with water and add 1 teaspoon of salt.
  • Place the lid on the instant pot and set the valve to seal.
  • Cook on manual pressure for 8 minutes.
  • When the timer goes off, turn the instant pot off.
  • Quick release the pressure from the pot.
  • Drain the potatoes and return to the instant pot.
  • Add the remaining salt, pepper, garlic powder, butter, milk and sour cream to the potatoes. Mash until smooth.
  • Serve topped with parsley if desired.

Notes

NOTE:  This recipe can be doubled in a 6 or 8 quart instant pot. Don't double the cooking time.
NOTE:  There is no need to cut the potatoes into small chunks.  Slice each potato into large rounds (about 4-5 rounds per potato).
