White Chocolate Popcorn

White Chocolate Popcorn
1 bag (3.5oz) microwave popcorn (preferably buttered)
1 pkg (10oz) vanilla flavored baking chips (or use vanilla chocolate specifically for melting)

Place popped popcorn in large bowl. Put baking chips in 1-quart glass measuring cup. Microwave on LOW for 30 seconds, take out to stir, and continue until most, but not all, chips are melted and shiny. (If microwave’s only setting is HIGH, cook in shorter increments and stir in between.) Be careful not to burn the chocolate. Stir chocolate until it is smooth, shiny and completely melted. Another option is to use a double-boiler. (If you do overheat the chocolate, immediately pour into a cool bowl, add chunks of unmelted chocolate, and stir continuously. If want to use chocolate to dip fruit, add vegetable oil.) Add chocolate mixture to popcorn and mix well. Spread on cookie sheet and allow to cool completely. Can place in fridge for ~15 mins, take out and break into pieces.
