From mom - One delicious way to use garden produce. My kiddos love it too. Can also add pre-cooked, shredded chicken or turkey as another layer. I used a few large carrots in this batch, so it has an orange tint. :)
Zucchini Casserole
1 large zucchini, cut in 1” pieces
1 medium onion, diced (opt)
1 can cream/chicken soup
1 pkg stove top stuffing mix
½ pint sour cream
2-3 carrots, grated
1 cube butter or marg
Precook zucchini & onion until almost tender. Drain well. Mix undiluted soup & sour cream. Stir in grated carrots & zucchini. Set aside. Melt butter & add dry stuffing mix & seasoning packet – DO NOT add water! Reserve 1/3 cup; put rest in a layer in a greased 11x13 baking dish. Pour zucchini mixture in next. Then sprinkle reserved dressing on top. Bake at 350 for 30 minutes or until cooked through.
