This recipe comes from the P90X message boards for healthy eating. It's delicious with a new twist - but my mama's is still good. :)
Not Your Mama's Tuna Casserole P90X Message Boards
6 eggs
1 (10oz) pkg frozen chopped spinach, thawed and drained
2 T onion powder
1 (12oz) can tuna, drained
2 (10.75oz) cans condensed cream of mushroom soup
1 c sour cream
1/4 c butter, melted
4 slices soft bread, torn into small pieces
Preheat oven to 350. Hard boil eggs, chop.* Combine the chopped eggs, spinach, onion powder, tuna, soup, and sour cream in a 9x13 inch baking dish. Mix well. Scatter bread pieces over tuna mix; drizzle with melted butter. Bake in preheated oven until bread is toasted and casserole is hot, about 30-35 mins.
Cook time: 35 min, Ready in: 35 min, Servings: 8
*Place eggs in saucepan and cover with cold water. Bring water to a boil. Cover pan, remove from heat, and let eggs stand in hot water for 12-15 mins. Remove from water; peel and chop.
