What a success this meal was. Yum. Plus it's done in a crock pot (EASY; good news for the cook) and low-fat.
Pulled Pork with Root Beer Sauce Better Homes and Gardens
1 2.5-3 lb pork sirloin roast
1/2 t salt
1/2 t black pepper
1 T cooking oil
2 medium onions, cut into thin wedges
1 c root beer (don't use diet)
6 cloves garlic, minced
3 c root beer (two 12oz cans or bottles)
1 c bottled chili sauce
1/4 t root beer concentrate (opt - I left this out)
Several dashes bottled hot pepper sauce (opt)
8 to 10 hamburger buns, split (toasted, if desired)
Lettuce leaves (opt)
Tomatoes (opt)
Trim fat from meat. If necessary, cut up to fit in slow cooker. In large skillet brown meat on all sides in hot oil. Drain off fat and transfer to cooker. Add onion, 1 c root beer, and garlic. Cover and cook on low 8-10 hrs or high 4-5 hrs. About half hour before serving, make sauce. Stir together the 3 c root beer and chili sauce in a saucepan. Bring to boiling; reduce heat. Simmer, uncovered, stirring occasionally, about 30 mins or until mixture is reduced to 2 cups. If desired, add root beer concentrate and hot pepper sauce. Transfer meat to a cutting board or serving platter. Using two forks, pull meat apart into shreds. Using a slotted spoon, transfer onion to serving platter; discard cooking juices. If desired, line buns with lettuce and tomato, then place on meat and onions, drizzled with some of the root beer sauce.
