Honey Whole Wheat Bread

Honey Whole Wheat Bread
1 ½ T dry active yeast
1 c warm water
1 t sugar
1 ½ c whole wheat flour
¼ c honey
2 T shortening
¾ t salt
1 c white flour (as needed)

Preheat oven to 200 for 10 mins so oven is ready to proof bread. Grease pan and set aside. In mixing bowl, dissolve sugar in warm water, add yeast and stir until dissolved. Wait one minute for yeast to soften and bubble. To prepare yeast, add whole wheat flour, honey, shortening and salt. Beat till smooth. Mix in remaining flour, ½ cup at a time, until dough is soft but not sticky. Do not add so much flour that the dough is stiff. Place dough on lightly floured surface and knead until smooth and elastic. Roll dough into rectangle and shape into loaf. Place loaf seam down into greased pan. Grease top of bread with shortening. Place in proofed oven for about 20 mins to rise. Bake at 400 for about 20-23 mins or until loaf makes a hollow sound. Remove immediately from loaf pan and cool on wire rack.
