Zucchini Bread

My all-time favorite zucchini bread recipe from a roommate in college. When using regular size loaf pans, I don't fill them up (fill less than half) so the center will get cooked - like the one in the picture. Using this method or when using small loaf pans, check at about 25-30 minutes so they don't overcook.

2 c grated zucchini
3 eggs, beaten
2 c white sugar
1 c oil
3 t vanilla
1 t salt
1 t baking soda
¼ t baking powder
2-3 t cinnamon
1 t nutmeg (or less)
¼ t ground cloves (or less; opt)
3 c flour
1 c ground walnuts

Preheat oven to 325. Mix all and pour in 2 greased loaf pans. Bake at 325 for 45-60 mins. Makes 2 loaves.
