Chicken and Rice Soup

Chicken and Rice Soup Janice Goimarac
Skinned chicken or turkey
3 lg potatoes, peeled and grated
3 lg carrots, peeled and grated
1 onion
1 c rice

Boil chicken (whole, pieces or bones) in large pot of water. Remove chicken and skim undesirable floaties from broth. Add remaining ingredients to boiling broth; salt and pepper to taste. Cook 20 min. Remove desired amount of chicken from bones and return to pot. Serve. (Great for leftover turkey bones)
