5 Minute Healthy Ranch Dressing

5 Minute Healthy Ranch Dressing Nicole Modic
Prep 5 min, Total 5 min  

1 Cup Greek Yogurt I recommend using full fat greek yogurt!
2 Teaspoons Worcestershire Sauce
½ Lemon juiced
1 Teaspoon Dried Dill
1 Teaspoon Onion Powder
1 Teaspoon Garlic Powder
1 Teaspoon Dried Parsley
1 Teaspoon Kosher Salt
½ Teaspoon Ground Black Pepper
¼ Cup Water this is optional but can help to thin out the dressing if it's too thick

Add all of the ingredients (minus the water) to a blender. If you don't want to use a blender, you can add all of the ingredients to a large bowl and whisk them together by hand. Blend until all of the ingredients are combined and the ranch dressing is smooth and creamy! If the dressing is too thick, add in the water and re-blend until your desire consistency is reached. Once the ranch dressing is done, serve and enjoy! Store any leftovers in an airtight container, in the fridge, for up to one week.

Apricot Bites

Top a dried apricot with 1 t goat cheese (rolled into a little ball), 1 dried cranberry, and a sprig of fresh thyme.

French Radishes

Trim ends off 10 radishes and slice in half. Top each with 1/2 t room-temperature butter, then sprinkle with salt.

Lemon Ricotta Crostini with Honey

Toast (broil) slices from 1 baguette. Top each slice with 1 T ricotta cheese, 1/2 t honey, 1/2 t lemon zest.

Strawberry Salsa

Finely chop: 1 tomato, 1/4 c fresh cilantro, 1 small carton/about 2 c strawberries, juice from 1/2 a lime, and 1/4 red onion. Combine all with a pinch of salt. Serve with crackers or chips.

Edamame Hummus

  • 2 c shelled edamame beans
  • 1/4 c lemon juice (1-2 lemons)
  • 1/4 c water
  • 1 T tahini
  • 3 cloves garlic, peeled
  • 1/4 t salt
  • 1/2 t cumin
  • 1/3 c olive oil
Combine everything in a food processor until very creamy, then scoop into a bowl. Sprinkle with paprika and serve with raw sliced vegetables (cucumbers, bell peppers, etc).

Mango Tango Salsa

Mango Tango Salsa

3 ripe mangos, pitted and cubed
1 T minced red onion
1/2 jalapeno pepper, seeded and minced
Juice of 1 lime
1/4 c chopped cilantro

Combine all ingredients. Let stand 10 minutes. Toss before serving. Serves 6.
*Wash hands thoroughly in hot soapy water after handling hot peppers!

Yogurt/Peanut Butter Dip

So good and good for you!

Yogurt/Peanut Butter Dip
1 c plain greek yogurt
1/2 c creamy peanut butter
honey to taste (1-3 T) 

Combine all with a whisk or spoon and enjoy with
apple slices
bananas
celery sticks
or whatever else you like!

Variations:
Add 2-3 raspberries to make the dip a pinkish color for Valentines Day. Cinnamon is a nice addition too. Almond butter can be substituted for peanut butter.

Lemon Basil Dip

I haven't tried this yet but I want to....

Lemon Basil Dip Rindy

1/4 c fresh lemon juice ("beat" the lemon)
1 t sugar
1/2 c fresh basil leaves
1/2 t salt
1/4 c fresh parsley leaves
1 clove garlic, chopped
1 c mayo

Blender - combine all but mayo. Whip mayo till creamy, add processed herb mixture ingredients. Cover and refrigerate till ready to serve. Can serve with cold shrimp, cooked & cooled tortellini, lightly cooked asparagus.

Guacamole

I never realized homemade guacamole could taste so good until I tried this one. Thank you Pinterest.

3 avocados
1 lg clove garlic
2 T lime juice
1/2-3/4 c packed cilantro leaves
1/2 t salt
1/2 tomato, roughly chopped
1/4 red onion, roughly chopped

Blend the avocado, garlic, lime juice, cilantro and salt in a food processor (or blender). Once smooth, add the tomato and red onion. Blend until the onion and tomato are in smaller pieces, but still slightly chunky.

Salsa

Mom's classic

Salsa
1 lg can crushed or diced tomatoes (or 2 16oz cans)
1 dash vinegar
1-2 t garlic salt
Pinch of oregano
½ t basil
2 pinches crushed red chili peppers
¼ c chopped onion
4 green onions with tops, sliced
1 can chopped green chilies
Fresh cilantro, chopped (if you have it)

Put tomatoes in blender. Add spices (next 5 ingredients) and blend. Add remaining ingredients and stir, do not blend. Serve with chips, etc.

Onion Dip

Onion Dip
1 c low-fat cottage cheese
1 c non-fat sour cream
1 pkg onion soup mix

Blend in mixing bowl. Refrigerate to stimulate flavor. Serve with veggies, chips or crackers.

Layered Bean Dip

Fam recipe.

Layered Bean Dip
1 lg can refried beans
1 pkg. taco seasoning (3 T.)
1 c. guacamole
1 chopped onion
1 c sour cream
Diced tomatoes
Grated cheese

Spread beans on platter (or baking dish), sprinkle with taco seasoning. Layer in order and top with cheese.

Bean Dip

3 cans of beans (black, kidney, small red, blackeyed peas, pinto or whatever you like)
good seasons Italian all natural salad dressing mix
1/4 cup vinegar (I use balsamic)
1/2 cup oil
1 or 2 Tbs lime or lemon juice (opt)
1 or 2 Tbs water
1/4-1/2 cup cilantro (opt)
1 or 2 fresh tomatoes
1 avocado
salt and pepper and maybe a little garlic salt
bell peppers (if you have them)

Rinse and drain beans. Mix all ingredients.
