This recipe came from a publication when we were living out in Buffalo. It's a great new spin on pizza and good for when you want to leave out the meat. And a great way to get your kids to eat their beans. :)
Red Bean Pizza
1 T oil
1 c onion, chopped
2 cloves garlic, minced
3 c red beans (cooked or canned)
12oz jar salsa
1/4 c parsley, chopped
pizza dough (make your own or buy 10oz tube refrigerated version)
1 c cheddar or Monterey jack cheese, divided
Preheat oven to 425F. Heat oil in large skillet over medium heat, add onion. Cook 3 minutes or until softened. Add garlic and cook 2 min. Add beans, salsa and parsley. Cook, stirring occasionally, until heated through, about 5 min. Meanwhile, prepare pizza dough. Sprinkle dough with 1/2 the cheese, spoon bean mixture on top of cheese spreading to cover entire surface, then add remaining cheese. Bake in preheated oven for 10-15 mins or until hot and cheese is melted. Makes 4 servings. Prep: 15 min, Cook time: 15 min.
