Sicilian Meatroll

Sicilian Meatroll  Mom
2 slightly beaten eggs
3/4 c soft bread crumbs (1 sliced)
1/2 c tomato juice
2 T snipped parsley
1/2 t dried oregano, crushed
1/4 t salt
1/4 t pepper
1 clove garlic, minced
2 lbs lean ground beef
6 1oz thin slices cooked ham
1 3/4 c shredded mozzarella cheese (about 7oz)

In a large bowl, combine all except ham and cheese. On foil, pat meat mixture into a large rectangle (12x10in). Arrange ham slices over meat, leaving an inch borer all the way around. Sprinkle on 1 1/2 c cheese over ham. Starting from short end, carefully roll up meat, using the foil to lift. Seal edges and ends. Place roll, seam side down, in a regular big baking pan (13x9). Bake 350 for 1 hr 15 min, or until juices run clear. Center of meat roll will be pink because of ham. Sprinkle remaining cheese over top, place back in oven for 5 min. Makes 8-10 servings.
