Three Berry
Spinach Salad Rachel Shaw
Greens for salad (red leaf,
spinach, etc.)
Sugared pecans
Avocado, chopped
Red onion, sliced thinly into
rings
Blueberries, strawberries and
raspberries
Dressing:
2 c mayo
1/3 c half and half
1/3 c raspberry vinegar
2/3 c sugar
2-3 T seedless raspberry jam
2 T poppy seeds
Blend.
Sugared Pecans
1 egg white
1/4 c packed brown sugar
1 dash vanilla extract
2 c pecans (1 16oz bag)
Preheat oven to 275. Line a
cookie sheet with wax paper. Spray the wax paper with cooking spray. Beat egg
white until stiff. Add brown sugar and vanilla. Stir until smooth. Mix in
pecans and stir until coated. Pour the nuts onto the prepared cookie sheet. Bake
until browned, approximately 10-15 mins.
