Another granola I love! I don't always have all the ingredients, but I often substitute almonds or sunflower seeds for the pecans or soy nuts.
Blueberry Granola
3 c rolled oats
3/4 c chopped pecans
3/4 c chopped walnuts
1/4 c soy nuts
2 T flax seeds (or flaxseed meal)
4 T brown sugar
1/3 c honey
2 T canola oil
1/2 t ground cinnamon
1/4 t salt
1 c blueberries
Preheat the oven to 300F. Line a rimmed baking sheet with parchment paper. In a large bowl, mix the oats, nuts, flax seeds and brown sugar. In a sauce pan combine the oil and honey over medium-low heat until smooth. Turn off heat and stir in cinnamon and salt. Pour the honey mixture over the oat/nut mixture and toss to coat. Spread on the prepared sheet. Bake until golden brown, about 40 min; stirring every 10 min. Remove from the oven and cool on rack. Stir in blueberries and store in an airtight container for up to one week.
(Or store without blueberries and add them when you pour a bowl. I just discovered freezing blueberries - they freeze great, don't need to be thawed, and you don't have to worry about them going bad! In fact, they make your milk in the bowl even more cold.)
