Honey Whole Wheat Bread Lindsey Ohlson
3 ½ c almost boiling water
1 c honey
1 can evaporated milk (or 12oz almond milk. Half and half is an equal ratio substitute, so if you don't have half and half, mix heavy cream and regular milk)
1 ½ T salt
2/3 c oil
Mix to combine then add the following in this order:
5 c whole wheat flour
3 T yeast
¾ c vital wheat gluten flour – sprinkle around the top
Mix until everything is wet and cover. Allow to sit for 10
mins. Then combine
5-6 c whole wheat flour
The dough can be a little stickier, but I usually mix it
until it pulls away from the sides of the Bosch. Mix for 3-5 minutes to knead
the dough. Then form into loaves – 4 per batch. Allow to rise. Bake at 350 for 30-32
minutes.
