Vegetable Medley

From my sister-in-law. Especially delicious with fresh garden produce. Such a light, healthy, satisfying meal. We love it.

Vegetable Medley Lisa Ashby
Tomatoes
Onions
Yellow squash
Mushrooms
Green and orange bell peppers
Cucumber
Smoked sausage
S&P
Italian spices
Garlic salt
3-4 T vegetable or olive oil
Mozzarella cheese, shredded (1-2 good handfuls)
Noodles, cooked (spaghetti or linguini)

Cook sausage. Cut up desired amounts of vegetables and sausage into large bite-sized pieces. Combine all in a large baking dish. Add spices generously, oil, and cheese. Mix together well. Bake at 350 for 20-30 minutes. Serve over hot cooked noodles. Prep time: 20 min, Cook time: 30 min
