I absolutely love this broccoli and SO DO MY KIDS. They chow it down AND it's still healthy; not covered in a sauce. Win win win! It's very easy too.
Lemon Parmesan Broccoli The Sister's Cafe
3 heads broccoli (~ 3 lbs)
3 T olive oil
salt and freshly ground pepper
1 c freshly grated Parmesan (or the dried stuff - that's what I use)
1 lemon, juiced (or use lemon juice)
Preheat the oven to 400. Chop up the broccoli (into spears or florets). Arrange on a nonstick cookie sheet, drizzle with olive oil and season with a little salt and lots of pepper. Toss to coat evenly. Transfer to the oven and roast for 10 minutes. Remove and sprinkle the cheese evenly over the top and bake until the cheese melts and forms a crisp shell over the broccoli (about 10 minutes, or 5 for the dried parmesan). Lift the broccoli out onto a platter with a spatula and drizzle with fresh lemon.
