Squash Casserole

Delicious! A hit with the little ones too. (Update: I always double this recipe now for our family of 6 and still put it all in one casserole dish.)

Squash Casserole The Sisters Cafe
2 c fresh summer squash diced (zucchini or yellow)
1 small onion (~ 1/2 cup)
2 eggs
1/2 c milk
1 sleeve Ritz crackers
1/4 c butter, melted
1 c grated cheese
Salt & Pepper

Combine the squash and onion in a small saucepan and cover with water. Boil gently until tender, ~5min. Drain. Salt & pepper to taste. Mash the squash and onion a little, then stir in the eggs and milk. Place in a buttered casserole dish. In separate bowl or ziploc bag, crush the crackers and add the butter & cheese. Layer the cracker mixture over the squash. Bake at 400 for 20-30 mins.
