We had this delicious breakfast on a catamaran trip. I had never thought of putting sweet potatoes in eggs - it was amazing! I have tried to perfect it, still working out the measurements. They served this with cantaloupe mixed with lime and salt.
Sweet Potato Eggs Brian Fitzpatrick
Olive oil
Sweet potatoes, chopped small
Eggs
Onion, chopped
Cumin
Coriander
Garlic
Cook onions in olive oil and add sweet potatoes. Cook until sweet potatoes are soft, add garlic, then eggs with a little water. Season with cumin, coriander, S&P.
