This can be adapted to other flavors if desired. Make it a day ahead.
Ice Cream Cake from Alyssa Dobson
Mint ice cream sandwiches
1 package Grasshopper cookies
1 pint mint chocolate chip ice cream
1 small jar fudge sauce (11oz)
8oz container cool whip
Layer mint ice cream sandwiches on the bottom of a cake pan (lined with parchment paper). Crush a package of grasshopper cookies and mix half of them in with a pint of mint chocolate chip ice cream (that has been out for a bit so it was soft) and layer it on top of the sandwiches. Freeze for a couple hours. Drizzle jar of fudge sauce on top and then cool whip. Sprinkle on the rest of the cookies. Freeze overnight.
