Dill-Ricotta Biscuits

I tried these once and fell in love with them. Yum!

Dill-Ricotta Biscuits Ladies Home Journal
4 c flour, plus more for work surface
1 T baking powder
1 t baking soda
1 T sugar
1 ½ t salt
½ c butter, cut up
1 c buttermilk
1 c part-skim ricotta
3 T chopped fresh dill

Heat oven to 375. In a large bowl, whisk together flour, baking powder, baking soda, sugar and salt. Using a pastry blender or two knives, cut in butter until mixture resembles small peas. In a medium bowl, whisk together buttermilk, ricotta and dill; stir into flour mixture. On a lightly floured surface with floured hands, pat out dough to 1-inch thickness. Using a 3-inch biscuit cutter, cut out biscuits. Place biscuits 1 inch apart on a baking sheet. Bake until puffed and golden, 25-30 mins. Transfer sheet to a wire rack and let cool slightly. Serve warm. Makes 12 biscuits. Prep:15 min, Total time:55 min
